what we need

  • 2aubergines, halved, scored
  • 2 tbspwhite miso
  • 1 tbspmirin
  • 1 tbspsoy sauce
  • 1 tsphoney or maple
  • 200 gtenderstem broccoli
  • 1 tbspsesame oil
  • to servejasmine rice

how it goes

  1. oven to 200°c. rice on.
  2. mix miso, mirin, soy, honey. brush onto aubergine cut sides.
  3. aubergine + broccoli on a lined tray. sesame oil over the greens.
  4. 18 min in the oven. glaze will catch a little — that's the point.
  5. serve on rice. pan juices over the top.
