what we need

  • 4eggs
  • 2 slicesgood sourdough
  • 20 gbutter
  • to tastemarmite (one slice only)
  • pinchsalt, black pepper

how it goes

  1. whisk eggs with a pinch of salt. not too much air.
  2. butter in a cold pan. eggs in. lowest heat. stir slow with a spatula.
  3. pull off the heat while still a bit wet — they keep cooking.
  4. toast the sourdough. marmite on one slice. eggs piled on. pepper.
