what we need
- 4eggs
- 2 slicesgood sourdough
- 20 gbutter
- to tastemarmite (one slice only)
- pinchsalt, black pepper
how it goes
- whisk eggs with a pinch of salt. not too much air.
- butter in a cold pan. eggs in. lowest heat. stir slow with a spatula.
- pull off the heat while still a bit wet — they keep cooking.
- toast the sourdough. marmite on one slice. eggs piled on. pepper.
