lutong bahay, just meat-free. the sauce is still the whole thing.

what we need

  • 2 cupsleftover aubergine adobo (+ sauce)
  • 2 cupscooked jasmine rice
  • 2eggs
  • 1cucumber, sliced
  • to servespring onion, thinly sliced

how it goes

  1. warm the rice with a splash of water, lid on, 2 min.
  2. reheat the aubergine in its sauce, gently. do not boil hard.
  3. fry two eggs in a bit of the adobo oil — runny yolks.
  4. bowl it up: rice, aubergine, egg on top, cucumber on the side, spring onion over.
