lutong bahay, just meat-free. the sauce is still the whole thing.
what we need
- 2 cupsleftover aubergine adobo (+ sauce)
- 2 cupscooked jasmine rice
- 2eggs
- 1cucumber, sliced
- to servespring onion, thinly sliced
how it goes
- warm the rice with a splash of water, lid on, 2 min.
- reheat the aubergine in its sauce, gently. do not boil hard.
- fry two eggs in a bit of the adobo oil — runny yolks.
- bowl it up: rice, aubergine, egg on top, cucumber on the side, spring onion over.
